2019 Ultra Brut: Ultra Brut is our driest sparkling wine, its low dosage highlighting the structure and minerality of our Brut. Very dry and brisk, it is a contemplative wine that appeals to the true aficionado. A mélange of key lime, honeydew melon, ginger, and green apple on the nose leads into a palate dancing with notes of ripe pineapple, fresh pear, yuzu, and lemon méringue. The textural vibrance of this wine pairs beautifully with foods with a natural volumptuousness, like CEO Remi Cohen's Roasted Crab.
2015 Late Disgorged Le Reve: Aged nearly ten years sur lies en bouteille (on the lees, in the bottle), our limited-production Late Disgorged Le Rêve is an opulently layered masterpiece, a testament to our finest fruit, consummate méthode traditionnelle winemaking, and patient cellaring. Profound aromatics of brioche, honeycomb, marzipan, citrus, and petrichor leap from the glass. Sparkling Winemaker Zak Miller's opulent flavorful Lobster Bisque is a magical match for this show-stopping tête de cuvée.
2022 Famous Gate Pinot Noir: The “Famous Gate” pays homage to our deep commitment to Pinot Noir. For the past thirty years, we have carefully cultivated three old-vine blocks of the historic Swan selection of Pinot Noir. Each small block is located at a different vineyard; two are in Napa, and one on the western Sonoma side of Carneros. In this wine, Swan takes center stage, with two supporting characters – “Hanzell” selection and “Dijon 115” to create the highest expression of our estate-grown Carneros terroir. It's nothing short of majestic when paired with Still Winemaker TJ Evan's Classic Slow-Roasted Prime Rib.
2021 Verméil Demi-Sec: Verméil (vehr-MAY) is a Demi-Sec, or lightly sweet sparkling wine. Modern tastes have driven most fine sparkling wines to the dry side; however, an extra touch of dosage makes for a delightful experience. This wine opens with aromas of pear, honeydew melon, white flowers, and a hint of lychee that beckon on a delicate mousse of bubbles. Luscious flavors evoke notes of nectarine, honeycomb, lemon custard, and ginger filling the wine’s long finish. Founding Winemaker Eileen Crane loves pairing this wine with a rich, Classic Pound Cake, as the perfect dessert to conclude your holiday meal.
