Enjoy a taste of our charcuterie plate at home- a bottle of our 2016 Estate Brut and 6 ounces of "Sec" Salumi made using our Brut and crafted by local salumeria, Journeyman Meat Co. Sonoma, California Journeyman Meat Co. is dedicated to creating artisanal salumi, sausage, and cured meat with the same skill and attention that goes into producing wine. Founder Pete Seghesio brings his considerable winemaking skills to bear in creating this salumi for us to use in our tasting room. The Sec Salumi incorporates our brut base wine into a traditional French spice recipe. This salumi is naturally best paired with our 2016 Estate Brut to complement the components.
