Enjoy two specially made Salumi from Sonoma, Ca based Journeyman Meat Co., paired with two of our classic wines 2016 Estate Brut and 2018 Estate Pinot Noir. Pete Seghesio brings his winemaking skills and craft of artisanal salumi, sausage, and cured meat to Sonoma County. Journeyman Meat Co. is a shop dedicated to creating Italian-style meats with the same skill and attention that goes into producing wine. Re-create our charcuterie plate and pairing at home with this indulgent offering.
The Sec Salumi is specially made for Domaine Carneros using a traditional French recipe. This salumi features a mix of our Brut, garlic and spices and naturally is best paired with our 2015 Estate Brut to complement the components.
The Finocchiona salumi is made in the the traditional Tuscan way, just as Pete learned from world-famous butchers Dario Cecchini of Panzano and the Marini family of Florence. This salumi features fennel and fennel pollen and pairs beautifully with our 2018 Estate Pinot Noir.
