Richness and complexity begin on the nose, with bounding aromas of citrus zest, green apples, macadamia nut, and a hint of brioche. The palate is round and full, revealing poached pear, crisp apple, yuzu, honeydew melon, and lemon sorbet with a toasty finish that lingers on the palate, begging for another sip. This winery exclusive wine has been aged to perfection yet will enjoy additional evolution in the cellar over the next decade.
2018 had the coolest temperatures we had seen since 2011, allowing an extended hang time for the fruit and longer flavor development. Additionally, replenished reservoirs and healthy vineyards from the abundant rains of the previous vintage allowed for a larger than normal crop. These elements translate to the perfect combination of a high-yield and high-quality vintage that winemakers dream about.
Food Pairing Notes
This 2018 vintage of our Estate Brut pairs nicely with raspberry tart or chocolate covered strawberries. Perfect with just a few toasted nuts or goat cheeses, it will also enhance simple to complex meals. Oysters and shellfish dishes work well, and we suggest trying it with Asian cuisine.
