Our Late Disgorged Brut is a small cuvée comprised only of grapes grown in our own vineyards. In 2009 we made our ﬁrst prototype of this cuvée and we were so pleased with the results that we committed to produce it on an ongoing basis exclusively for our Wine Club members and winery guests. We love this wine now, but know it has exceptional further aging potential.
Wonderful notes of lemon meringue, toasted nuts, apple cobbler with hints of black cherry create a bouquet for the nose. The palate ﬂavors host an array of tropical fruits (dragon fruit and others) with the Pinot Noir component coming through strongly, especially the red fruit and cherry notes.
2011 was a cold, late vintage; the long slow summer helped concentrate the ﬂavors in our vineyard. It was a low yielding harvest of very ﬁne quality. Approximately 3% of the cuvée underwent malolactic fermentation prior to blending, which added an additional layer of ﬂavor and texture.
Food Pairing Notes
We recommend pairing it with rich double and triple cream or goat cheeses. Perfect with just a few toasted nuts, it will also enhance simple to complex meals. Oysters, poultry and even meat dishes work well and we suggest trying it with Asian cuisine.
