Le Rêve is a highly respected tête de cuvée - our winery’s finest Sparkling wine and frequently named America’s Best Sparkling. French for “the dream,” Le Rêve is crafted from 100% estate-grown Chardonnay, making it a pure expression of Domaine Carneros.
Before a sparkling wine earns the right to feature its vintage on the label, it must be aged in the bottle for three years. Our Late Disgorged Brut goes well beyond that strict requirement with a total of six years aging sur lie en bouteille - on the lees, in the bottle. The result is an enhanced, enriched edition of our acclaimed Domaine Carneros Brut Cuvée.

We call this vineyard “Le Ciel Serein” - The Serene Sky. Rolling hills of exceptional soil are the hallmarks of this site, carefully developed between 2002 and 2004 and planted with Wente clone Chardonnay. This winery exclusive Chardonnay shows a medium yellow golden hue in the glass, presenting cashew nut, sugar cookie, lemon curd, and vanilla pudding on the palate.
The Lawler Ranch vineyard is located on Ramal Road just east of our Tula Vista vineyard. The eastern facing slopes were originally planted in 1990, and then grafted to Dijon Clones in 2004. The defining feature of this wine is its savory character. Cedar, sassfras, orange zest, and wild fennel are all featured in the nose.
Verméil (vehr-MAY) is a Demi-Sec, or lightly sweet sparkling wine. When sparkling Champagne was first created in the latter part of the 17th century, sugar was flooding into Europe from Brazil, the Caribbean and eventually Louisiana. As sugar became widely available, sparkling Champagne became a sweet drink. Modern tastes have driven most fine sparkling wines to the dry side; however, an extra touch of dosage makes for a delightful experience.
