Cutting Preserves are similar to ‘fruit cheese’ in Europe. Using a classic slow-cooked recipe crafted from original turn of the century Orcas Island pink bartlett pears, this highly concentrated fruit puree is cooked until almost ‘cuttable’. This recipe is slightly softer than you’d find in Europe and has been gently spiced with a pinch of pink peppercorn. We find it to be a perfectly rich accompaniment to wine, cheese and charcuterie. At the chateau, you'll find it on our sparkling wine cheese plate paired with Mt. Tam triple cream and the rich and silky Hop Along, both from Cowgirl Creamery.
