Enjoy a taste of our charcuterie plate at home- a bottle of our 2018 Estate Pinot Noir paired with Finocchiona Salumi crafted by local salumeria Journeyman Meat Co. Sonoma, California Journeyman Meat Co. is dedicated to creating artisanal salumi, sausage, and cured meat with the same skill and attention that goes into producing wine. Founder Pete Seghesio brings his considerable winemaking skills to bear in creating this salumi for us to use in our tasting room. His Finocchiona salumi is made using the traditional Tuscan technique, just as Pete learned from world-famous butchers Dario Cecchini of Panzano and the Marini family of Florence. This salumi features fennel and fennel pollen and pairs beautifully with our 2018 Estate Pinot Noir.
Note: the salumi is shelf stable and does not need to be refrigerated until packaging is opened.
