Sparkling Rosé has long been a staple in the Domaine Carneros line-up of méthode traditionnelle wines. However, since its debut release in 2012 our Avant-Garde Rosé has proved to be a refreshing and bright still wine which can be enjoyed year-round.
We believe that when you close your eyes a rosé should taste and feel like a white wine. It should evoke bright flavors and move with crispness on the palate. The delicate nose offers honeysuckle, rosewater, tangerine, and wild fennel. On the palate, one finds peach skin, watermelon and wild strawberry, with an edge of salinity that is pleasantly mouthwatering.
The process began when we night-picked 7 tons of Pinot noir. We choose two clones, Pommard and Wadenswil, at different maturity levels for more finesse and complexity. The Pommard delivers the high toned fruit and floral notes, while the Wadenswil delivers the savory aspect and herbes de Provence character of the nose. The grapes were gently whole cluster pressed in the cool morning air to liberate the juice from the skins with minimal contact. Fermentation was conducted in a range of vessels, stainless barrels to preserve fruit, and neutral cooperage to add body and texture. Special yeasts were selected to enhance fruit profile, and the Malo-lactic fermentation inhibited to preserve acidity.

This wine pairs beautifully with Niçoise salad, ahi tuna tartare, smoked salmon or Caprese salad.
