2015 Le Ciel Serein Chardonnay
Barrel fermentation is the classic way to marry ﬂavors of gently toasted oak to the grapes. Several new barrels (33%) were incorporated to lend sweetness and spice. Upon completion of fermentation, the young wine was gently stirred to promote contact with the yeast lees and create a creamy texture. Malolactic fermentation was inhibited to provide a counterpoint of lively acid.
